In doc/info, remove mention of extract_categories.sh from build machinery.
Ever since 23cdc3c, extract_categories.sh has been obsolete and unused.
The functionality implemented by extract_categories.sh was taken over by Makefile.am
itself in commit 23cdc3c, and extract_categories.sh was disabled (via @: in Makefile.am)
at that time. Later the category processing was moved into build_html.sh.
