utils/snapshot: Don't remove utils/syncviewer from snapshots
The purpose of removing the entire utils/ directory from snapshots
was that 'snapshot' and 'makedeb' can't be used from a snapshot.
However, the new 'syncviewer' can, so only remove what we want to
have removed.
